Meat Sauce

Why do we have specific sauces to go with meats? Is it the same in other countries? What is a Horse Radish? Is is one word or two??

Yep im from Guatemala and steak is usually eaten with "Chirmol" wich is chopped tomato, onions, some green stuff and lemon, salt and pepper.
